This frozen yogurt bark is flavoured with lime zest and perfectly complemented by shredded coconut, making this a refreshing and light snack.

Although the recipe uses erythritol, you can omit this completely if you prefer, or use your own preferred low carb sweetener.

Ingredients

  • 1 ¼ cup yogurt, plain, whole milk
  • 1 tablespoon 100% pure erythritol by now
  • ¼ cup, shredded coconut, dried, shredded or flaked, unsweetened
  • 1 Zest of 1 small lime lime zest

Instructions

  1. Line an 8 x 8 inch freezer proof tray or dish with baking paper.
  2. Add the yogurt, lime zest, erythritol and coconut to the tray. Mix together well to combine and smooth over the surface with a spatula to ensure it is of an even thickness.
  3. Transfer to the freezer to set for 2-3 hours, then using a warm knife, slice into 16 even squares.
