This simple salad is loaded with fats and flavor from low carb veggies, aromatic herbs, creamy avocado and tangy yogurt.
This quick and easy salad is a light and refreshing option for summer, perfect served alongside barbecued meats.
Ingredients
- 4 small – 3" long scallions
- 1 each avocado
- 1 tablespoon cilantro
- 1 tablespoon dannon all natural yogurt, plain
- 1 teaspoon lime juice, fresh
- ½ tablespoon olive oil
- ½ medium cucumber
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Slice the cucumber in half and scoop the seeds from the center and discard. Slice the cucumber into half inch chunks and add to a mixing bowl.
- Roughly dice the avocado flesh and chop the scallions and cilantro. Add to the bowl with the cucumber and toss to combine.
- Whisk together the yogurt, olive oil, lime juice, salt and pepper. Spoon over the salad and stir well, coating everything in the dressing. Refrigerate until ready to serve.
