These low carb tacos use walnuts in place of ground meat, blended with a mix of herbs, spices and sweet roasted pepper.

These are a great base for vegetarian tacos if you are avoiding soy products and are easily adapted with your favorite taco toppings!

Ingredients

  • 4 inner (small) leaf romaine lettuce
  • 1 cup walnuts
  • 1 teaspoon oregano, dried
  • 1 teaspoon cumin, ground
  • 1 teaspoon coriander leaf, dried
  • 1 teaspoon paprika
  • 1 teaspoon olive oil
  • 1 teaspoon lime juice, fresh
  • 1 teaspoon lime zest
  • 1 tablespoon sour cream
  • 1 tablespoon cilantro
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic, powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground
  • ¼ cup roasted red peppers in brine by kroger

Instructions

  1. Add the walnuts to a food processor along with all the dried herbs and spices, roasted pepper, lime juice and zest, olive oil and salt and pepper to taste. Pulse to form a ground meat like consistency.
  2. Divide the walnut meat between the 4 lettuce leaves.
  3. Top each with a little sour cream and scatter with fresh cilantro to serve.
