These low carb tacos use walnuts in place of ground meat, blended with a mix of herbs, spices and sweet roasted pepper.
These are a great base for vegetarian tacos if you are avoiding soy products and are easily adapted with your favorite taco toppings!
Ingredients
- 4 inner (small) leaf romaine lettuce
- 1 cup walnuts
- 1 teaspoon oregano, dried
- 1 teaspoon cumin, ground
- 1 teaspoon coriander leaf, dried
- 1 teaspoon paprika
- 1 teaspoon olive oil
- 1 teaspoon lime juice, fresh
- 1 teaspoon lime zest
- 1 tablespoon sour cream
- 1 tablespoon cilantro
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- ¼ teaspoon garlic, powder
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper, ground
- ¼ cup roasted red peppers in brine by kroger
Instructions
- Add the walnuts to a food processor along with all the dried herbs and spices, roasted pepper, lime juice and zest, olive oil and salt and pepper to taste. Pulse to form a ground meat like consistency.
- Divide the walnut meat between the 4 lettuce leaves.
- Top each with a little sour cream and scatter with fresh cilantro to serve.
