These simple roasted veggies are tossed with smoky paprika and oven baked until tender and golden then tossed with oozy melted cheddar cheese.
This is a great side dish for families, perfect to get kids to enjoy their veggies!
Ingredients
- 6 large – 1" to 1 1/4" diameter radish, raw
- 2 teaspoon gourmet collection smoked paprika by mccormick
- 1 ½ tablespoon olive oil
- 1 cup flowerets broccoli florets raw
- ½ cup, grated cheddar cheese
- ½ large – 3" diameter x 3 3/4" red bell peppers, raw
- ½ large – 3" diameter x 3 3/4" yellow bell peppers, raw
- ½ large – 3" diameter x 3 3/4" orange bell pepper
- ½ teaspoon garlic powder
- ¼ teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Cut the broccoli into bite sized chunks, dice the pepper into thick strips and quarter the radishes. Add to an oven proof dish.
- Drizzle over the olive oil and sprinkle over the garlic powder, paprika, salt and pepper. Use your hands to rub the seasonings all over the vegetables.
- Transfer to the oven to bake for 20-22 minutes or until tender and slightly caramelized.
- Sprinkle over the cheese and toss to combine, serve warm.
