You can buy coconut butter at the store or you can make it yourself using a food processor! It is very easy and only has a few simple ingredients. Using unsweetened coconut flakes ensures that the coconut butter has 0 net carbs, which means you can top anything with it to get some extra healthy fat in your diet!

Ingredients

  • 14 ounce organic unsweetened coconut flakes by great value
  • â…› teaspoon coarse kosher salt by morton
  • ½ teaspoon vanilla extract
  • 2 tablespoon the ultimate sugar replacement granular by swerve

Instructions

  1. Place coconut flakes in a large food processor. If you have a small food processor simply cut the recipe in half and do two batches. It is important to be sure you have enough coconut flakes in your food processor so it will have enough to spin and process the coconut flakes.
  2. Blend the coconut flakes until they liquify, the time will depend on your food processor. This could take upwards to 20 minutes. At first it will look sandy, but be sure to keep blending it until it starts to liquify. Be sure to scrape the sides down at least 3-4 times to ensure all the coconut flakes are being processed.
  3. Once coconut is liquefied, add the salt, vanilla extract and Swerve. Add Swerve to your personal taste! I added 2 tablespoons.
