These chicken thighs are full-on​ curry flavor and super easy to put together. Pair with a keto-friendly side or vegetable. The recipe says 1 lb of chicken thighs which is the cooked weight for nutritional purposes. You should start with 1 1/4 lb of raw chicken thighs.

Ingredients

  • 1 pound chicken thigh, skin eaten
  • 1 ½ teaspoon coarse kosher salt by morton
  • 1 tablespoon curry powder

Instructions

  1. Preheat an oven to 425 F. Combine the salt and curry powder together.
  2. Sprinkle on each side of the chicken thighs, being sure to coat the skin well. Rub in.
  3. Bake for 40-45 minutes until the chicken thighs are nice, golden and crispy. Serve hot!
