These Mediterranean inspired zucchini are full of fresh flavors and make for a great salad or bbq side.
Perfect served alongside grilled meats or kebabs.
Ingredients
- 1 medium zucchini
- ½ each – juice from one lemon lemon juice
- 2 tablespoon olive oil
- 2 tablespoon, crumbled feta cheese
- 2 tablespoon, whole pieces pine nuts
- 2 tablespoon peppermint, fresh
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Peel the zucchini and carefully slice into 6 strips lengthways about 1/4 inch thick.
- Brush the zucchini all over with the oil and lemon juice and season with salt and pepper.
- Heat a griddle pan over a medium / high heat and add the coated zucchini strips. Cook for 2-3 minutes on each side until tender and charred.
- To serve, crumble the feta over the zucchini and scatter with pine nuts, chopped fresh mint and a drizzle of olive oil.
