If you’re craving fresh ingredients but only need a snack, these cobb salad snack bites are very filling and satisfying! Snack on one to hold yourself over until another meal or fuel yourself before a workout. You can also double up on the servings for a savory breakfast option.

Ingredients

  • 1 slice – 6" long bacon, pork
  • 4 large hard boiled egg
  • ¼ ounce romaine lettuce
  • ¾ ounce tomato
  • ¼ ounce blue cheese

Instructions

  1. Cook a strip of bacon to you preferred level of doneness. If you make it too crisp, it may be hard to use in the last step. Once done and cooled, cut the bacon into 4 pieces.
  2. Prepare the remaining ingredients by slicing hard boiled eggs in half, cutting pieces of lettuce, slicing tomato, and slicing blue cheese into squares.
  3. You can arrange each cobb salad bite in whatever order you want! These snack bites were arranged each with a piece of bacon, followed by tomato, blue cheese, lettuce, and then secured with a toothpick. At your discretion, you can sprinkle a pinch of sea salt and pepper over each snack bite.
