These crispy chicken thighs are coated in a parmesan, rosemary and ground almond crumb and baked until golden.

Perfect served with a side salad, low carb slaw or a portion of buttered broccoli.

Ingredients

  • 4 medium chicken thigh, skin removed before cooking
  • 2 tablespoon, grated parmesan cheese
  • 1 ounce food cupboard home baking almonds ground by sainsbury's
  • 1 ½ teaspoon rosemary, fresh
  • 1 tablespoon mayonnaise
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Add the ground almonds, Parmesan, garlic powder, salt and pepper to a mixing bowl. Finely chop the rosemary and add to the bowl. Mix together well to combine.
  3. Coat the chicken thighs liberally in mayonnaise on both sides.
  4. Roll the thighs in the breading mixture so that they are well coated all over.
  5. Transfer to a shallow oven tray and bake for 20-25 minutes until the chicken is cooked through and the coating is golden brown.
