Keto Vegan Crispy Tofu and Broccoli Stir Fry is an excellent Asian-inspired dish full of ginger and garlic flavors. The super firm tofu is made super crispy by placing it in an air fryer first. In the meantime, the broccoli is simmering inside the soy, ginger, garlic sauce. Right before serving, the tofu is tossed quickly into the sauce to glaze it. What kind of tofu do I use?

Please use super firm tofu as it is very low in overall net carb and high in protein which is critical for a successful Keto diet.

Do I need to use an air fryer?

No, you do not need to own an air fryer. You can crisp up the tofu in the oven in the same manner at 400 F. The length of cook time will be longer than an air fryer, but you will achieve the same effect.

Other ways to modify the recipe

Other ways to modify the recipe include other very low-carb vegetables such as bok choy, napa cabbage, asparagus, or zucchini. Also, feel free to add spicy like sriracha or sambal to the stir fry sauce.

Ingredients

  • 1 tablespoon avocado oil
  • 1 package vitasoy usa organic nasoya super firm cubed tofu
  • ½ teaspoon coarse kosher salt
  • 6 oz broccoli
  • 1 tablespoon avocado oil
  • 1 clove garlic
  • 2 teaspoon ginger
  • 2 tablespoon tamari sauce
  • 2 tablespoon water
  • ⅛ teaspoon baking aids xanthan gum
  • 1 teaspoon sesame oil

Instructions

  1. Dice up the tofu into about 1” x 1” pieces. Toss the tofu with 1 tbsp avocado oil and ½ tsp kosher salt.
  2. Place the tofu into the bottom of an air fryer and cook at 400 F for 20 minutes. Be sure to give the basket a shake halfway through the cooking time.
  3. In the meantime, prepare the stir fry sauce by combining the soy sauce, water, xanthan gum, and sesame oil.
  4. Preheat a large nonstick skillet over medium-high heat. Add 1 tbsp avocado oil and swirl the pan. Add in minced ginger and garlic and stir briefly for about 30 seconds. Then add in the broccoli and 1 tbsp of water.
  5. Stir briefly to steam the broccoli. Add in the sauce and allow it to cook with the broccoli. The sauce will start to thicken.
  6. Add in the crispy tofu and toss everything together quickly.
  7. Serve immediately.
