This simple egg fried rice is packed with low carb veggies, cauliflower rice and tangy tamari sauce.

This is a great filling lunch option or quick and easy dinner.

Ingredients

  • 2 cup cauliflower rice
  • 2 tablespoon tamari sauce
  • 1 ¾ ounce green beans
  • 1 cup flowerets broccoli florets raw
  • 1 tablespoon olive oil
  • 1 tablespoon, chopped shallot
  • 1 medium raw egg

Instructions

  1. Dice the broccoli into bite sized chunks and the green beans into thirds. Add to a small saucepan of boiling water and simmer for 3-4 minutes until crisp-tender. Drain completely and steam dry.
  2. Heat the olive oil in a skillet over a medium heat. Add the shallots, broccoli and beans. Stir fry for a minute or so until the shallot is tender.
  3. Add the cauliflower rice, stir well to combine and pan fry for a minute.
  4. Make a well in the center of the rice. Beat the egg and add to the well. Allow to settle for a moment then scramble into the rice and vegetables, until cooked through.
  5. Add the tamari sauce and stir well to combine.
