Sesame seeds, when toasted, can give off a wonderfully warm and nutty smell that is really aromatic. Coat a few pork chops in them, and you have a dinner worthy of your favorite Chinese restaurant! These pork chops sit on top of a greens bed flavored with soy sauce, garlic, ginger, and chopped green onions.

Ingredients

  • 1 pound pork chops
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon ginger, ground
  • ¼ teaspoon onion powder
  • 3 teaspoon olive oil
  • ½ cup sesame seeds
  • ⅓ cup olive oil
  • ¼ cup soy sauce
  • ½ each – juice from one lemon lemon juice
  • ½ teaspoon garlic
  • ½ teaspoon ginger, ground
  • 1 ½ teaspoon, chopped scallions
  • 2 ounce romaine lettuce
  • 1 ounce arugula

Instructions

  1. Lay out 4 boneless pork chops and sprinkle the salt, pepper, first amount of ginger, and onion powder across the exposed sides.
  2. Rub 1 teaspoon of the first amount of olive oil into the exposed sides of the pork chops. Pour the sesame seeds onto a plate and lay the olive oil side of the pork chops down in the seeds. Flip each pork chop over and press the bare sides into the sesame seeds, so both sides of each are covered in sesame seeds.
  3. Heat the remainder of the first amount of olive oil in a non-stick pan over medium heat. Place the pork chops in the oil and place a lid over the pan. Cook the pork chops on one side for about 5 minutes – until the seeds turn golden brown and give off a strong nutty smell.
  4. Flip the pork chops over and cook for an additional 4-5 minutes with the lid off – until both sides are the same golden brown color.
  5. After cooking the pork chops, set them aside to rest. In a bowl, whisk together the final amount of olive oil, the soy sauce, lemon juice, garlic, ginger, and green onion.
  6. Roughly chop or tear the romaine and arugula and combine the greens together. Toss the greens with the dressing you just made.
  7. Serve each plate with approx. ¾ oz of salad and 1 pork chop. If there is extra dressing from mixing your salad, you can pour this over the pork chops!
