These crusted pork fillets are coated in a crumb of ground almond, Parmesan, lemon zest and thyme, then pan fried until crisp and golden.
Perfect served with roasted vegetables or a green salad.
Ingredients
- 2 chop pork chops, center loin, fresh, visible fat eaten
- 1 tablespoon olive oil
- 1 teaspoon lemon peel or zest raw
- 1 small raw egg whole
- 2 ounce food cupboard home baking almonds ground by sainsbury's
- ½ tablespoon thyme, fresh
- ¼ cup, grated parmesan cheese
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the almonds, Parmesan, thyme leaves, lemon zest, salt and pepper to a mixing bowl. Stir well to combine.
- Beat the egg in a bowl.
- Dip the pork loin fillets into the beaten egg until well coated.
- Dip the pork fillets in the breading and press down gently so that it sticks to the meat.
- Heat the oil in a frying pan over a medium-high heat. Add the pork fillets, cooking for 4-5 minutes on each side or until the pork is completely cooked through and the crumb is crisp and golden.
