Meal prep should never be tricky! Simply dice up some succulent Polish sausage, some keto vegetables, and you have an easy, one-pan meal! This recipe fills 3 meal prep containers, or you can double the recipe to make it last the whole week.
Ingredients
- ½ tablespoon olive oil
- 8 ounce kielbasa
- 8 ounce zucchini
- 4 ounce broccoli, raw
- ½ tablespoon olive oil
- ¾ teaspoon salt
- ½ teaspoon black pepper, ground
- 1 teaspoon italian seasoning
- 2 clove garlic
Instructions
- Preheat an oven to 375 degrees. Prep a large sheet pan by spraying it and spreading the first amount of oil across it. Slice the kielbasa into thin rounds and arrange them in the center of the pan.
- Chop the zucchini and broccoli. In a bowl, combine the veggies with the second amount of olive oil, salt, pepper, and italian seasoning.
- Spread the veggies around the sausage in the sheet pan. Crush and place two garlic cloves in the vegetables.
- Bake the sheet pan for about 35 minutes, lightly tossing the vegetables half way through. You can enjoy hot or spread out in 3 meal prep containers.
