This simple roasted cauliflower is coated in an earthy tahini dressing with aromatic spices.
These golden florets make a great accompaniment to a roasted chicken or griddled lamb chops.
Ingredients
- 2 tablespoon tahini
- 2 teaspoon cumin, ground
- 2 teaspoon lemon juice
- 1 medium – head – 5" to 6" diameter cauliflower
- 1 teaspoon spices coriander seed or ground
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
- Cut the cauliflower into florets and transfer to a mixing bowl.
- Add the tahini, oil, lemon juice, herbs and spices to a small mixing bowl and stir well to combine.
- Drizzle the tahini mixture over the cauliflower and toss to combine, coating the cauliflower in the marinade.
- Arrange the cauliflower across the lined shallow oven tray and transfer to the oven for 18-20 minutes or until tender and golden, turning halfway through.
