Delicious, chocolatey and topped with the creamiest mint cream cheese frosting studded with chocolate chips this fudgy brownie will be sure to please.
Ingredients
- 8 tablespoon butter
- 1 cup the ultimate icing sugar replacement by swerve
- 1 cup 100% cocoa special dark by hershey's
- 4 large raw egg
- 1 teaspoon vanilla extract
- ¾ cup almond flour
- ½ cup, whole pieces – regular chocolate chips, sugar free
- 8 ounce cream cheese
- ¾ cup the ultimate icing sugar replacement by swerve
- 1 teaspoon pure mint extract
- ¼ cup, whole pieces – regular chocolate chips, sugar free
Instructions
- Preheat an oven to 350 F. Melt the butter in the microwave until completely melted. Add 1 cup of Swerve, the dark cocoa powder, and a pinch of salt.
- Add in the eggs and vanilla extract.
- Mix in the almond flour.
- Add in ½ cup sugar-free chocolate chips to the batter and mix to combine well.
- Pour the batter into an 8” x 8” pan sprayed well with nonstick cooking spray. Bake for 12-15 minutes until the brownies are just set, but still fudgy.
- In the meantime, in a stand mixer or with a hand mixer, combine softened/room temperature cream cheese with the remaining Swerve icing, and mint extract. Once creamy, add in the chopped chocolate chips and combine again.
- Allow brownies to cool completely before frosting them. Frost brownies and enjoy!
