The title says it all! Harissa, mozzarella, and mushrooms are the only ingredients in this side dish (minus a little extra butter for keto fat). You can easily double, triple, or quadruple this recipe for more servings.

Ingredients

  • 4 ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • ½ tablespoon butter, unsalted
  • 1 tablespoon harissa spicy traditional morrocan red pepper sauce by mina
  • 1 ½ ounce mozzarella cheese, whole milk

Instructions

  1. Preheat an oven to 350 degrees. Quarter whole cremini mushroom heads and toss them in a mixing bowl. Melt the butter in a microwave and whisk it into the harissa before pouring it over the mushrooms. Toss the mushroom in the butter-harissa sauce until coated.
  2. Pour the coated mushrooms in a small baking dish and top with slices of mozzarella. Bake for 10-12 minutes uncovered. If cooked too long, the mushrooms will release too much liquid, so keep the mushrooms at an al dente texture.
