This simple cauliflower steak is loaded with pizza inspired toppings of salty olives, sweet tomato and tender mushrooms.
This makes for a flavorful lunch option served with a simple side salad.
Ingredients
- 4 medium black olives
- 2 tablespoon tomato sauce
- 2 medium mushrooms
- 1 clove garlic
- 1 tablespoon olive oil
- ½ tablespoon basil, fresh
- ⅓ medium – head – 5" to 6" diameter cauliflower
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- ½ teaspoon italian seasoning
Instructions
- Slice the cauliflower into two even steaks, each about a half inch thick. Add to a pan of boiling water and simmer until the steaks are tender. Remove from the pan and pat dry.
- Heat the olive oil in a skillet over a low/medium heat. Finely slice the mushrooms and crush the garlic. Add to the pan and cook gently for a minute or two until just tender.
- Preheat the oven to 400 degrees Fahrenheit.
- Divide the tomato sauce evenly between the two cauliflower steaks and sprinkle over the Italian seasoning. Divide the garlic mushrooms between the two steaks.
- Finely slice the olives and arrange over the mushrooms.
- Transfer the cauliflower steaks to a shallow oven tray and bake for 8-10 minutes until the cauliflower starts to turn golden and is hot through.
