Ingredients
- 1 ¼ cup unblanched almond flour by hodgson mill
- 5 tablespoon psyllium husk powder soluble fiber by now
- 1 teaspoon coarse kosher salt by morton
- 1 teaspoon baking powder
- 2 tablespoon the ultimate icing sugar replacement by swerve
- 2 teaspoon apple cider vinegar
- 1 cup boiling water
- 3 large raw egg, white
- 1 teaspoon vanilla extract
- ½ cup the ultimate icing sugar replacement by swerve
- ¼ cup brown sugar replacement by swerve
- ¼ teaspoon coarse kosher salt by morton
- 1 teaspoon saigon cinnamon
Instructions
- Preheat an oven to 350 F. Prepare a bundt pan with nonstick cooking spray. Combine the almond flour, psyllium husk powder, 1 teaspoon kosher salt, baking powder and 2 tablespoons of Swerve (icing sugar) together in a medium mixing bowl.
- Add 1 cup of boiling water and begin to stir to incorporate the water halfway.
- Then add the apple cider vinegar, vanilla extract and raw egg whites. Mix very well to combine. You may need to use your hands to combine or a stand mixer with a paddle attachment.
- Then in a small bowl, combine the rest of the Swerve (both the icing sugar and brown sugar), the rest of the kosher salt and cinnamon. Mix well.
- Roll the dough into 1 ½” balls and coat completely in the cinnamon sugar mixture.
- Begin to line the bottom of the bundt pan with the balls. You should be able to make 20-22 balls at this size. Fill the bottom of the bundt pan with one layer and then add one more layer of balls on top.
- Sprinkle the remaining cinnamon and sugar mixture on top and bake for 40-45 minutes until the bread is completely cooked through.
- The bread will collapse if it is not cooked long enough. Remove from the oven and allow to cool slightly before unmolding.
