These flavorsome green beans are spiced with the heat of fresh ginger and cooked with aromatic seasonings.

These make a great side to Asian inspired main dishes – perfect with pork or fish.

Ingredients

  • 9 ounce green beans (string beans), raw
  • 2 tablespoon cilantro
  • 1 ½ slice – 1" diameter ginger root, raw
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 large scallions
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
  2. Whilst the beans are cooking, crush the garlic, finely grate the ginger and thinly slice the scallion. Heat the olive oil in a skillet over a low/medium heat and add the ginger and garlic. Sweat gently for a minute or two until tender.
  3. Add the green beans to the pan with a pinch of salt and pepper and stir well to coat in the ginger and garlic. Cook for a minute or two more until hot through.
  4. Roughly chop the cilantro and stir through the beans to serve.
