These deliciously simple mini burgers are loaded with ground beef, tangy cheddar and sweet tomatoes.

These make for a great weekend snack or treat in between meals.

Ingredients

  • ½ pound ground beef
  • 1 teaspoon oregano, dried
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 small – 2 2/5" diameter tomato
  • 8 inner (small) leaf romaine lettuce
  • ½ cup, grated cheddar cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the ground beef to a mixing bowl along with the oregano, garlic powder, salt and pepper.
  2. Mix all ingredients together well using your hands and then divide into four even patties.
  3. Heat the olive oil in a large pan over a medium heat. Add the beef patties to the pan, frying until golden brown all over and completely cooked through. About 8 minutes.
  4. Remove the pan from the heat and sprinkle each patty with 1/4 of the cheese.
  5. To serve, arrange each patty on a lettuce leaf. Top with a slice of tomato. Top with the remaining lettuce leaf and secure with a toothpick.
