Super simple to make and loaded with healthy fats, this keto friendly coconut ice is the perfect treat for adults and kids. This recipe makes one large bar which can be divided into smaller individual bars or bite size squares — perfect for snacking.

This recipe utilizes coconut oil, creamed coconut and desiccated coconut to create the perfect balance between creamy and crunchy.

Ingredients

  • 5 tablespoon organic coconut oil
  • 3 tablespoon creamed coconut by ktc
  • 1 cup desiccated unsweetened coconut by compass
  • 1 tablespoon xylitol sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Add the creamed coconut, coconut oil, vanilla, xylitol and 2/3 cup of desiccated coconut to a food processor and blend on a high-speed setting until you have a thick liquid consistency. This will be relatively smooth but will still retain some crunch from the coconut.
  2. Pour the coconut mixture into a small shallow dish or mould approximately 3 x 6 inches and sprinkle the remaining desiccated coconut over the top, pressing down gently.
  3. Transfer the dish to the freezer and allow the mixture to firm and set for 20-30 minutes.
  4. Slice the coconut ice into individual slices or squares for serving.
