Did you know you can very easily make homemade gyro meat? Most store-bought gyro meats are bulked with non-Keto-friendly ingredients like soy or vegetable oils, but by making gyro meat at home, you can have control over what goes into it. A 50/50 mixture of beef and lamb is pureed together in a food processor with diced onions and spices like cumin, oregano, marjoram, thyme, black pepper, and rosemary. The resulting mixture is baked in a loaf pan and then sliced thinly once cooled. The final product can be cut and seared on both sides to add another depth of flavor or eaten as is with lettuce, red onion, cucumbers, tomatoes, and feta cheese on the side.

Do I have to use lamb?

Feel free to use only lamb or beef only; however, most gyro meats have both.

Can I use fresh herbs?

Yes, if using fresh herbs, double or triple the amount of fresh from the recipe below.

Ingredients

  • 1 small onion
  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 teaspoon coarse kosher salt
  • 2 clove garlic
  • 2 teaspoon cumin, ground
  • 2 teaspoon oregano, dried
  • 1 teaspoon marjoram, dried
  • 1 teaspoon thyme, dried
  • 1 teaspoon black pepper
  • 1 teaspoon rosemary, dried

Instructions

  1. Preheat an oven to 350 F. Dice the onion and place it in a food processor. Pulse it until the onion is broken up. Place the onion into a bowl lined with a paper towel and gather the paper towel around the onion.
  2. Squeeze the water out from the onion and set it aside.
  3. Add both types of meat to the food processor and the onion from the previous step and all the dried spices and garlic cloves. Puree very well together.
  4. Place the meat mixture into an olive oil greased loaf pan. Place the loaf pan in a large casserole dish filled halfway with water. Bake for 55-60 minutes or until a thermometer placed into the center of the loaf is 165 F.
  5. Once the meat has cooled slightly, slice into thin pieces and saute them on both sides with a bit of olive oil if desired.
  6. Serve the gyro meat with lettuce, sliced tomatoes, sliced red onions, cucumbers, and crumbled feta. Note that the calorie count for the vegetables in this picture is not included, please add them separately to your daily count.
