This tender cabbage is loaded with aromatic spices, creamy butter and sweet red onion.
This is a great side to accompany curried meats, rotisserie chicken or lamb chops.
Ingredients
- 2 cup cabbage
- 2 tablespoon unsalted butter
- 1 clove garlic
- 1 teaspoon cumin, seed
- 1 tablespoon curry powder
- ½ cup vegetable broth, bouillon or consomme
- ¼ medium – 2 1/2" diameter red onion
Instructions
- Heat a tablespoon of butter in a large skillet over a low/medium heat. Finely slice the onion and add to the skillet, cooking gently until tender.
- Thinly slice the garlic and add to the pan along with the cumin seeds. Cook for a further minute or two until fragrant.
- Thinly slice the cabbage and add to the skillet with the remaining butter and curry powder. Stir well to combine and cook over a medium heat for 4-5 minutes until the cabbage is just tender.
- Add the vegetable stock and simmer for 5-6 minutes until all the liquid has evaporated and the cabbage is soft.
