These lamb chops are coated in a tomato based spiced marinade and griddled until caramelized on the outside and tender in the center.
Perfect served with cauliflower rice or spicy green beans!
Ingredients
- 2 teaspoon tomato puree
- 2 tablespoon olive oil
- 2 medium lamb chops
- 1 teaspoon cumin, ground
- 1 teaspoon curry powder
- 1 teaspoon spices coriander seed or ground
- 1 clove garlic
- 1 slice – 1" diameter ginger root, raw
- 1 teaspoon lemon peel or zest raw
- ¼ teaspoon turmeric, ground
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Mince the garlic and finely grate the ginger. Add to a small mixing bowl along with the dried herbs and spices, lemon zest, tomato purée and one tablespoon of olive oil. Mix together well to combine.
- Add the lamb chops to a dish and spoon over the marinade. Use your hands to rub the marinade all over the lamb. Cover and refrigerate for a minimum of two hours.
- Grease a griddle pan with the remaining oil over a medium/high heat. Add the chops to the pan and cook for 3-4 minutes each side or until cooked to preference.
