This quick and easy scrambled egg is cooked with ground pork, aromatic scallions and spicy chili flakes topped with fragrant cilantro.
This makes a great breakfast option or lunch served with cauliflower rice.
Ingredients
- 4 ounce ground pork
- 4 medium raw egg
- 2 large scallions
- 1 teaspoon hot chili pepper, dried, with seeds
- 1 tablespoon cilantro
- 1 tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the eggs to a mixing bowl with the salt, pepper and chili flakes. Beat together to combine.
- Slice the scallions. Heat the oil in a skillet over a medium/high heat. Add the ground pork and scallions. Stir well and cook the pork through completely.
- Add the beaten egg and allow it to settle in the pan for a moment. Scramble with a wooden spoon and continue to cook to preference.
- Scatter with fresh chopped cilantro to serve.
