These deliciously spiced mini pork burgers are topped with a refreshing lime and cilantro mayo and a tangy dill pickle.
These are a perfectly filling snack or treat to rustle up between meals when hunger strikes!
Ingredients
- 4 medium link – breakfast size sausage, pork, fresh
- ½ teaspoon red chili flakes by sweet tomatoes
- ½ teaspoon garlic powder
- ½ teaspoon coriander leaf, dried
- 8 inner (small) leaf romaine lettuce
- 2 tablespoon olive oil
- 2 small – approx 2" long dill pickles
- 1 tablespoon mayonnaise
- ½ tablespoon, chopped cilantro
- 1 wedge – 1/8 of 2" diameter lime
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Squeeze the sausage meat out of the sausage casing into a mixing bowl. Add the chili flakes, coriander, garlic powder, salt and pepper.
- Using your hands, combine the ingredients together in the bowl and divide evenly into four portions. Form a small patty from each portion with your hands.
- Heat the olive oil in a large pan over a medium/high heat, add the patties and fry until golden brown all over and completely cooked through. About 8/9 minutes.
- Whilst the patties are cooking add the mayonnaise, cilantro and juice and zest of the lime wedge to a small mixing bowl. Stir well to combine.
- Arrange each patty on top of a lettuce leaf.
- Top each patty with mayonnaise. Slice the dill pickles in half lengthways and sit on top of the mayonnaise.
- Top each burger with a lettuce leaf and pierce with a cocktail stick to serve.
