This simple yet tasty lunch uses sliced ham in place of carb heavy wraps.

The wraps are filled with a creamy cabbage slaw and tangy dill pickle, creating an easy to prepare option, perfect for lunchboxes!

Ingredients

  • 4 medium slice – 4 1/4" x 4 1/4" x 1/16" – each 0.75 ounce ham slices
  • 4 small – approx 2" long dill pickles
  • 4 teaspoon mayonnaise
  • 1 teaspoon, sliced red onion
  • 1 teaspoon lemon juice
  • ¼ cup, chopped red cabbage
  • ¼ cup, chopped cabbage, green, raw
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Finely slice the cabbage and add to a mixing bowl along with the onion, 2 teaspoons of mayonnaise, lemon juice, salt and pepper. Mix well to combine.
  2. Divide the slaw mixture evenly between the four slices of ham, creating a strip close to the edge.
  3. Spread the remaining mayonnaise over the uncovered ham.
  4. Slice the dill pickles in half and arrange on top of the ham slices.
  5. Roll the ham up around the filling so that the edges overlap and you have a tight tube. Serve immediately or refrigerate until ready to serve.
