- 4 medium raw egg

- 1 ounce diced pancetta by waitrose
- ½ tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium/high heat. Add the pancetta and cook through until golden and crisp.
- Crack the eggs into a mixing bowl. Season and beat together.
