We love how simple, yet delicious this watermelon agua fresca is! It is perfect for summer, served in a tall glass filled with ice. The sweetness is just the right amount. Be sure to taste your watermelon before blending it and use more or less sweetener (or none at all) if the fruit is sweet on its own.

Is watermelon Keto-friendly?

Watermelon is relatively low in carbs compared to other fruits. Typically, one cup of watermelon has around 12 g of carbs and 1 g of fiber. If you are on strict Keto, you can dilute this drink with sparkling water or plain water for a lower carb count per serving. If you are following an LCHF diet, you don’t need to count carbs just make sure you are getting carbs from the right sources.

What other flavors can you add to this?

We used lime juice for tartness, but lemon juice would be delicious. Fresh herbs like spearmint can be blended up with the watermelon. You can get creative here. Berries would be a great addition too.

How can you make this lower in carbs?

You can dilute this mixture with sparkling water before serving to lower the carbs if you are on a strict Keto diet.

Ingredients

  • 2 pound watermelon
  • ¼ cup lime juice, fresh
  • ¼ cup the ultimate icing sugar replacement by swerve

Instructions

  1. Trim the ends of the watermelon off so it has two flat sides. Sit the watermelon up on one of the flat sides. Begin to trim the rind off the watermelon with a sharp chef’s knife almost like peeling a banana.
  2. Cut the watermelon into 1” cubes. Place them in a blender. Add freshly squeezed lime juice to the blender with the watermelon.
  3. Blend the watermelon and lime juice together. Make sure there is 32 oz of total liquid after blending (you should be able to read the outside of the blender for volumetric measurements). If the liquid comes up short add water to make it 32 oz.
  4. Taste the mixture and add sweetener if desired. Our watermelon was a nice sweetness level and we added sweetener. It is nicely sweet, but not too sweet.
  5. Place a couple of ice cubes in a glass. Pour the beverage over the ice and garnish with fresh mint leaves. Serve immediately.
