Avocado Boats with Scrambled Eggs and Crispy Pork Rinds

These breakfast avocado boats are topped with buttery scrambled eggs and crunchy pork rinds for added texture.

Ingredients

  • 2 small raw egg
  • 1 each avocado
  • 1 tablespoon, whole pieces fried pork rinds
  • ½ tablespoon butter
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the eggs to a mixing bowl, season to taste and beat together.
  2. Melt the butter in a saucepan and add the egg. Leave to settle for a moment and start cooking then use a spoon to scramble. Cook to preference.
  3. Slice one large avocado in half and remove the stone. Divide the scrambled egg between the two avocado halves.
  4. Crumble over the pork rinds to serve.
