These breakfast avocado boats are topped with buttery scrambled eggs and crunchy pork rinds for added texture.
These make a great breakfast option or even snack!
Ingredients
- 2 small raw egg
- 1 each avocado
- 1 tablespoon, whole pieces fried pork rinds
- ½ tablespoon butter
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the eggs to a mixing bowl, season to taste and beat together.
- Melt the butter in a saucepan and add the egg. Leave to settle for a moment and start cooking then use a spoon to scramble. Cook to preference.
- Slice one large avocado in half and remove the stone. Divide the scrambled egg between the two avocado halves.
- Crumble over the pork rinds to serve.
