This quick and easy egg fried cauliflower rice is tossed with creamy avocado, aromatic scallions and fresh cilantro.

This makes for a great breakfast or lunch option.

Ingredients

  • 2 cup cauliflower rice
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • 1 medium raw egg
  • 1 tablespoon cilantro
  • 1 large scallions
  • ½ each avocado
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat and add the cauliflower rice and lime zest. Pan fry for 2-3 minutes until tender.
  2. Make a well in the center of the rice. Beat the egg and pour into the well. Season everything with a little salt and pepper then scramble using a wooden spoon until the egg is cooked through.
  3. Thinly slice the avocado and finely chop the scallion and cilantro. Add the rice and toss through to combine.
