This quick and easy egg fried cauliflower rice is tossed with creamy avocado, aromatic scallions and fresh cilantro.
This makes for a great breakfast or lunch option.
Ingredients
- 2 cup cauliflower rice
- 1 teaspoon lime zest
- 1 tablespoon olive oil
- 1 medium raw egg
- 1 tablespoon cilantro
- 1 large scallions
- ½ each avocado
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat and add the cauliflower rice and lime zest. Pan fry for 2-3 minutes until tender.
- Make a well in the center of the rice. Beat the egg and pour into the well. Season everything with a little salt and pepper then scramble using a wooden spoon until the egg is cooked through.
- Thinly slice the avocado and finely chop the scallion and cilantro. Add the rice and toss through to combine.
