Is it breakfast? Lunch? A snack? This omelette pizza can be any meal you want it to be! Make the start to your day a little more savory and filling, or you can have breakfast for dinner. This “pizza” is topped with bacon and sauteed white mushrooms, and everything is glued together with melted mozzarella cheese.

Ingredients

  • 3 slice – 6" long bacon
  • 3 ½ ounce mushrooms white raw
  • 2 teaspoon olive oil
  • ¼ teaspoon black pepper
  • 4 large raw egg
  • 1 tablespoon heavy cream
  • ¼ cup, shredded cheddar cheese
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • ¼ cup, shredded mozzarella cheese

Instructions

  1. Chop your bacon into rough pieces and cook them in a pan on medium heat. Cook the bacon until just 1 side of the pieces are crisp.
  2. Toss in sliced mushrooms with the olive oil and first amount of pepper. Stir all the ingredients together and cook until the bacon cooks through and the mushrooms brown.
  3. Set the cooked bacon and mushrooms aside for later. In a small mixing bowl, whisk together the eggs, cream, cheddar, salt, second amount of pepper, garlic, and onion powder.
  4. Clean out your pan from earlier and return it to the stove. Pour in the egg mixture and place a lid on the pan. Cook on a low heat to cook the omelette through, until the edges are done and just the center is still undercooked.
  5. Arrange the bacon and mushrooms over the center of the omelette. Sprinkle the mozzarella over the center as well and return the lid to the pan. Continue cooking on low heat until the cheese has melted and the egg has just cooked through. Adjust the heat as necessary to avoid burning.
  6. Slide the cooked omelette pizza onto a serving dish and slice into 4 slices.
