These crunchy and creamy breakfast bars are packed with coconut and nuts, and bound with coconut oil and almond butter.

These are a great easy breakfast to make in advance and keep in the fridge.

Ingredients

  • 3 tablespoon coconut oil
  • 2 ounce food cupboard home baking almonds ground by sainsbury's
  • 3 tablespoon desiccated unsweetened coconut by compass
  • 3 tablespoon, shredded coconut, dried, shredded or flaked, unsweetened
  • 2 tablespoon, whole pieces chia seeds
  • 2 tablespoon, halves macadamia nuts, raw
  • 2 tablespoon, whole pieces almonds, raw
  • 2 tablespoon, slivered almonds, raw
  • 1 tablespoon almond butter, unsalted
  • 1 tablespoon maple flavored syrup by lakanto

Instructions

  1. Melt the coconut oil and add to a mixing bowl along with almond butter and syrup. Whisk together to combine until smooth.
  2. Roughly chop the almonds and macadamia nuts and add to the mixing bowl. Add the flaked almonds, desiccated coconut, coconut flakes, ground almonds and chia seeds. Mix together well to combine.
  3. Line a small baking dish or mould – roughly 3 x 6 inches with baking paper.
  4. Spoon the nut mixture into the lined mould and press down firmly.
  5. Transfer to the freezer for 30 minutes to set, then slice into 5 individual bars. Store in the refrigerator until ready to serve.
