A nutritious start to your day begins with this cauliflower rice hash breakfast skillet! It’s just slightly spicy and coated in spices that exude warmth and comfort. For meal prepping, cook 4 hard boiled eggs in advance, and keep these in a separate container until you’re ready to eat your meal.

Ingredients

  • ½ tablespoon olive oil
  • 4 ounce breakfast sausage
  • 1 ¼ ounce red bell peppers, raw
  • 1 cup, cut pieces cauliflower rice
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon crushed red pepper by simply organic
  • ¼ teaspoon onion powder
  • 2 large hard boiled egg
  • ½ tablespoon, chopped parsley

Instructions

  1. Heat the olive oil in a medium sized skillet over high heat. Add in the sausage. Use a spoon to break the sausage apart and cook until browned and crumbly.
  2. Chop the red bell pepper and stir it into the skillet. Stir in the cauliflower rice and all seasonings as well. Cook on medium heat for about 5 minutes – until the veggies are cooked through.
  3. Remove the skillet from the heat. Just before serving, lay two sliced hard boiled eggs over the ingredients as well as a sprinkle of freshly chopped parsley.
  4. Enjoy!
