These rich and creamy baked eggs are the ultimate breakfast indulgence or would make a great base for lunch accompanied by a simple salad.

Although grated cheddar has been used, this can be replaced like for like with your preferred grated cheese.

Ingredients

  • 4 medium raw egg whole
  • 2 tablespoon heavy cream
  • 1 tablespoon, grated parmesan cheese
  • ⅓ cup, grated cheddar cheese
  • ½ teaspoon unsalted butter
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 320 degrees Fahrenheit and boil a kettle of water.
  2. Butter 2 large ramekins and crack two eggs into the base of each.
  3. Season the eggs with the salt and pepper and sprinkle over the cheddar and parmesan.
  4. Drizzle each with a tablespoon of cream.
  5. Place the ramekins in a deep baking tray and half fill the tray with the boiling water.
  6. Transfer to the oven to bake for 15-20 minutes or until the eggs are cooked to your taste.
