These quick and easy muffins are rich with cream cheese and tangy feta and baked in a bacon cup.
These make a great breakfast option or lunch served with a green salad.
Ingredients
- 9 slice – 6" long bacon
- 5 small raw egg
- 2 tablespoon cream cheese spread
- 2 tablespoon feta cheese
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Select a muffin tray and line the edges of 6 individual muffin cups with one strip of bacon per cup. Slice the remaining bacon strips in half and layer a half strip into the bottom of each cup so that the base and sides are completely covered.
- Add the eggs, cheeses, salt and pepper to a mixing bowl and beat together to combine.
- Divide the cheesy egg mixture between the 6 bacon lined cups.
- Transfer to the oven for 18-20 minutes until cooked through and golden brown on top.
