  • 2 tablespoon coconut flour
  • ½ teaspoon baking powder
  • 2 tablespoon mayo
  • 2 tablespoon chocolate chips, sugar free
  • 2 tablespoon butter, salted
  • 2 tablespoon maple flavored syrup by lakanto

Instructions

  1. Preheat waffle iron on a medium-high setting. Combine eggs, coconut flour, baking powder, and mayo together with a small whisk.
  2. Add the chocolate chips and whisk well. Alternatively, you can use chopped dark chocolate for more distributed chocolate pieces.
  3. Spray waffle iron with a high-temp grill spray.
  4. Add half of the batter to the waffle iron and cook according to waffle iron directions.
  5. Open the waffle iron and make sure the waffle has a golden brown color. If not, close and allow to cook for 30-second increments. Remove from the waffle iron to a plate. Repeat with the remaining batter.
  6. Slather each waffle with butter and drizzle with warm Lankanto syrup.
