This very simple dish would work well for breakfast, brunch or a quick dinner alternative. Fresh eggs are cracked into buttered ramekins and baked to gooey-yolk perfection. They are topped with crumbled cotija and a drizzle of heavy cream.

Ingredients

  • 1 tablespoon butter, salted
  • 4 large raw egg
  • ¼ teaspoon coarse kosher salt by morton
  • ⅛ teaspoon black pepper
  • 4 teaspoon queso cotija cheese
  • 4 teaspoon heavy cream

Instructions

  1. Preheat an oven to 350 F. Grease four 4 ounce ramekins with room temperature butter.
  2. Crack one egg into each ramekin.
  3. Divide the salt and black pepper between all the ramekins as well as the crumbled cotija cheese. Bake for 10-12 minutes or until the whites of the egg is cooked and the center is gooey. Add additional minutes for desired doneness. In the last minute of cooking, add 1 tsp heavy cream to each ramekin and continue baking until total time has elapsed. Serve hot and dip with keto bread.
