This makes an “egg”-cellent quick breakfast or snack! Hard boiled eggs are paired with salty and smokey lox, crisp cucumber, and a pinch of fresh dill. Classic and simple!

Ingredients

  • 4 large raw egg
  • 1 ¼ ounce cucumber, raw, with peel
  • 1 ounce lox
  • 2 teaspoon, whole pieces dill weed, fresh

Instructions

  1. Cook 4 eggs to a hard boil (about 12 minutes). Once cooled and peeled, slice each egg in half lengthwise.
  2. Slice the cucumber into 4 slices and lay one on 4 halves of egg. Follow up each egg bite with a ¼ oz of lox and a ½ tsp of fresh dill sprig (not chopped). Sandwich the egg bites together with the remaining egg halves and seal with a toothpick.
  3. Feel free to add fresh cracked black pepper or additional fresh dill at your discretion to the eggs!
