This light but satisfactory breakfast meal is great for 1 person. Quickly prepare each portion separately for a yummy meal: a slightly spicy hard boiled egg, fresh and bright tasting greens, and crispy bacon!
Ingredients
- 1 large hard boiled egg
- ½ teaspoon mayonnaise
- ⅛ teaspoon tabasco sauce
- ⅛ teaspoon black pepper
- ⅛ teaspoon parsley, dried
- ¾ ounce arugula
- ½ teaspoon olive oil
- 1 teaspoon lemon juice
- 2 slice – 6" long bacon
Instructions
- Slice a hard boiled egg in half and scoop the yolk into a bowl. Use a spoon to smash the yolk into a paste and mix with the mayo and tabasco. Spoon the yolk filling back into the whites of the hard boiled egg and garnish with pinches of pepper and parsley.
- In a small mixing bowl, toss fresh clean arugula with the olive oil and lemon juice. Pair this next to the deviled egg.
- Cook two pieces of bacon to your liking of crispiness and arrange on your plate with the egg and arugula. Enjoy!
