This French Toast recipe is totally worth the effort for a fabulous brunch, a weekend treat, and serves as an excellent reminder that Keto does not equal bland or boring! Included in this recipe is a special bread loaf as well as the French toast batter. Note that the bread loaf will need to be made a day in advance.

*Please note that some ingredients for the dipping batter have a different amount listed in the directions. This allows you to have enough batter when dipping your French toast while keeping the nutritional information accurate.

Ingredients

  • 1 ¾ cup almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon baking aids xanthan gum by bob's red mill
  • 2 package stevia leaf noncaloric sweetener (green packet)
  • 1 teaspoon cinnamon
  • 5 large raw egg
  • ¼ cup heavy cream
  • ½ cup almond milk
  • ½ large raw egg
  • 2 package stevia leaf noncaloric sweetener (green packet)
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon, ground
  • ¼ teaspoon spices nutmeg ground
  • 1 ½ tablespoon butter

Instructions

  1. Preheat and oven to 350 degrees. In a bowl, combine the almond flour, baking powder, salt, xanthan gum, and first amounts of stevia and cinnamon with a whisk.
  2. Next, whisk in the first amount of eggs. Whisk until you have a lump-free, cake-like batter.
  3. Pour the batter in a loaf pan that has been sprayed with pan spray. Bake the loaf for 30-35 minutes, or until a toothpick comes out clean.
  4. Cool the loaf for 5 minutes, pop it out of your loaf pan, and allow it to cool fully before wrapping it in plastic wrap. When ready, have it tightly wrapped and store it in your refrigerator overnight. Keep the loaf cold will create a dense texture that is easy to slice the next day.
  5. The next day, unwrap your loaf and slice it in half lengthwise, revealing the inside of the load. Then, slice each half into 3 pieces, giving 6 pieces total.
  6. *Please note some ingredients in this step are different from the amounts listed in the ingredient list. In a bowl, whisk together ½ cup heavy cream, 1 cup almond milk, 1 egg, as well as the listed amounts of stevia, vanilla, cinnamon, and nutmeg.
  7. To make the french toast, have the toast slices, dipping batter, and a clean plate ready at your cooking area. Dip 1 or 2 pieces of toast in the batter, making sure they get completely soaked.
  8. Choose a pan that only fits the amount of toast you will be cooking at one time. It’s suggested you don’t try to cook more than 2 pieces at a time. Melt a ¼ TB of butter per piece of toast in the pan over a medium-low heat. Place your wet toast in the hot butter.
  9. Let the toast cook on one side for 60-120 seconds, depending on your heat level. For perfectly golden french toast, low and slow is the way to cook, albeit time consuming. Flip the toast over and cook evenly on the other side.
  10. Repeat this process for all 6 pieces of toast. Enjoy hot! Top with fresh fruit or a Keto Whipped Cream.
