You will love these multigrain waffles made with coconut flour, flax seeds and chia seeds. They get deliciously crispy out of the waffle iron and are great topped with fresh berries, sugar-free syrup or whipped cream.

Ingredients

  • 2 large raw egg
  • 2 tablespoon coconut flour
  • 2 tablespoon mayonnaise
  • 2 tablespoon water
  • ½ teaspoon baking powder
  • ½ tablespoon, whole pieces chia seeds
  • 1 tbsp, ground flaxseeds or flax seeds whole or ground

Instructions

  1. Preheat a waffle iron on a medium-high setting. Whisk eggs until scrambled.
  2. Combine all the ingredients and mix very well with a whisk.
  3. Prepare the hot waffle iron with high temp non-stick cooking spray (like grilling cooking spray). Pour half of the batter into the iron and cook according to your waffle iron. Repeat with the second half of the batter.
  4. Serve hot with toppings of choice like butter, fresh berries and sugar-free syrup.
