These flavorsome eggs are scrambled with bacon, sweet red bell pepper, tender onion and aromatic herbs and spices.

This makes a great breakfast option or lunch served on low carb bread.

Ingredients

  • 4 medium raw egg
  • 3 ounce okra
  • 2 slice – 6" long bacon
  • 1 tablespoon olive oil
  • 1 teaspoon oregano, dried
  • ½ teaspoon ground coriander
  • ½ teaspoon cumin, ground
  • ¼ small red onion
  • ¼ large – 3" diameter x 3 3/4" red bell peppers, raw

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Finely dice the onion and bell pepper and roughly dice the bacon. Slice the okra into 1/2 inch chunks discarding the tops and tips. Add to the pan along with the dried herbs and spices and stir well to combine. Pan fry for 5-6 minutes until the bacon and okra are cooked through and golden brown.
  2. Add the eggs to a bowl and season with salt and pepper. Beat to combine.
  3. Add the egg to the skillet and allow to settle for a minute then scramble with a wooden spoon, cooking to preference.
  4. Optionally serve with fresh cilantro.
