These flavorsome eggs are scrambled with bacon, sweet red bell pepper, tender onion and aromatic herbs and spices.
This makes a great breakfast option or lunch served on low carb bread.
Ingredients
- 4 medium raw egg
- 3 ounce okra
- 2 slice – 6" long bacon
- 1 tablespoon olive oil
- 1 teaspoon oregano, dried
- ½ teaspoon ground coriander
- ½ teaspoon cumin, ground
- ¼ small red onion
- ¼ large – 3" diameter x 3 3/4" red bell peppers, raw
Instructions
- Heat the olive oil in a skillet over a medium heat. Finely dice the onion and bell pepper and roughly dice the bacon. Slice the okra into 1/2 inch chunks discarding the tops and tips. Add to the pan along with the dried herbs and spices and stir well to combine. Pan fry for 5-6 minutes until the bacon and okra are cooked through and golden brown.
- Add the eggs to a bowl and season with salt and pepper. Beat to combine.
- Add the egg to the skillet and allow to settle for a minute then scramble with a wooden spoon, cooking to preference.
- Optionally serve with fresh cilantro.
