About

Get ready to beat the summer heat with this refreshing Keto raspberry, orange, and coconut smoothie. This recipe starts with a base of coconut milk beverage- one of the best plant-based milk options for a Keto diet. Heavy cream is the primary fat source in this recipe which provides richness. The tropical flavor is enhanced with frozen raspberries and some orange zest, giving you a layered fresh taste. This Keto coconut milk recipe is sweetened with liquid stevia, but any other liquid sweetener should work. Steer away from granulated sweeteners as they might not dissolve well in this drink.

To achieve the best cooling effect, use frozen raspberries instead of fresh ones, and place the Keto plant-based milk and heavy cream in the freezer for 30 minutes before preparation. That ensures that the final product is cooling and hydrating.

This coconut milk smoothie recipe is the perfect breakfast option for warm days to keep you hydrated. It is also a great pre/post-workout meal, providing you with sustainable energy and electrolytes. You can also add some protein powder to this low carb drink to assist in muscle recovery.

Can you adapt this recipe to a vegan or dairy-free diet?

Definitely! You can switch the heavy cream to canned coconut milk. But since the coconut flavor might overpower the other ingredients, we suggest switching half the coconut milk beverage for another Keto plant-based milk, such as almond milk. But feel free to experiment.

Can you switch the raspberry for other berries?

Absolutely! It’s always fun to try new variations of recipes. Strawberries are a good substitute in this recipe because they go well with the orange flavor. However, if you were to use blueberries, we suggest using lemon zest instead of orange zest.

Ingredients

  • ¾ cup coconut milk beverage, unsweetened
  • 3 tbsp, fluid (yields 2 cups whipped) cream heavy whipping
  • ⅓ cup frozen raspberries
  • 1 teaspoon lemon juice
  • 5 Drop liquid stevia
  • ¼ teaspoon vanilla extract
  • 1 1 teaspoon orange zest

Instructions

  1. Add the coconut milk beverage, heavy cream, frozen raspberries, lemon juice, stevia, and vanilla extract to a blender jug. Zest an orange, then measure out one teaspoon and add it along with the other ingredients.
  2. Blend on high for 30-60 seconds. Taste the smoothie, and adjust if needed. You might want to add more stevia or lemon juice to balance out the flavors.
  3. Pour it into a jar or a smoothie glass. For garnish, crush some frozen raspberries on top. Serve immediately.
