These savory breakfast eggs are combined with oozy mozzarella, crisp salami and cream cheese.
This is a great breakfast, brunch or lunch option served with keto toast.
Ingredients
- 6 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
- 4 medium raw egg
- 2 ounce mozzarella cheese
- 1 tablespoon cream cheese spread
- 1 tablespoon red onion
- 1 tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat. Roughly slice the salami and add to the skillet along with the onion and cook for a few minutes to brown the salami and soften the onion.
- Whilst the salami cooks, add the eggs to a mixing bowl with the cream cheese, salt and pepper. Crumble in the mozzarella and beat together to combine.
- Pour the beaten egg mixture over the salami and onion and allow to settle for a moment, then scramble with a wooden spoon until the egg is cooked through and mozzarella is melted.
