These savory breakfast eggs are combined with oozy mozzarella, crisp salami and cream cheese.

This is a great breakfast, brunch or lunch option served with keto toast.

Ingredients

  • 6 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
  • 4 medium raw egg
  • 2 ounce mozzarella cheese
  • 1 tablespoon cream cheese spread
  • 1 tablespoon red onion
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Roughly slice the salami and add to the skillet along with the onion and cook for a few minutes to brown the salami and soften the onion.
  2. Whilst the salami cooks, add the eggs to a mixing bowl with the cream cheese, salt and pepper. Crumble in the mozzarella and beat together to combine.
  3. Pour the beaten egg mixture over the salami and onion and allow to settle for a moment, then scramble with a wooden spoon until the egg is cooked through and mozzarella is melted.
