This simple scrambled egg is packed with smoky pan fried chorizo and sweet red onion.

This is a great option for breakfasts or could be served with a salad as a lunch option.

Ingredients

  • 3 medium raw egg
  • 1 ¾ ounce chorizo
  • 1 tablespoon olive oil
  • ¼ small red onion
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Roughly dice the chorizo and onion and add to the skillet. Cook until the chorizo is golden brown and releases its oil and the onion is tender.
  2. Add the eggs to a mixing bowl and season to taste, beat together.
  3. Add the beaten egg to the cooked chorizo and scramble until cooked to preference.
