This simple scrambled egg is packed with smoky pan fried chorizo and sweet red onion.
This is a great option for breakfasts or could be served with a salad as a lunch option.
Ingredients
- 3 medium raw egg
- 1 ¾ ounce chorizo
- 1 tablespoon olive oil
- ¼ small red onion
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat. Roughly dice the chorizo and onion and add to the skillet. Cook until the chorizo is golden brown and releases its oil and the onion is tender.
- Add the eggs to a mixing bowl and season to taste, beat together.
- Add the beaten egg to the cooked chorizo and scramble until cooked to preference.
