These sweet and creamy scrambled eggs are mixed with tangy goats cheese and crispy maple bacon pieces.
This makes a great breakfast option or light lunch served with salad.
Ingredients
- 3 medium raw egg
- 2 slice – 6" long bacon
- 2 tablespoon goat cheese, soft
- ½ tablespoon butter
- ½ tablespoon maple flavored syrup by lakanto
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
- Slice the bacon into 1.5 inch strips and arrange across the lined baking tray. Brush the syrup over the bacon pieces. Transfer to the oven for 10-12 minutes until crisp and caramelized.
- Whilst the bacon is cooking, add the eggs to a bowl, season to taste and beat together.
- Melt the butter in a saucepan over a low/medium heat and add the beaten egg. Allow to settle for a moment then scramble with a spoon.
- Once the egg is cooked, crumble in the goats cheese and bacon and stir through to serve.
