These individual baked eggs are rich with flavor, from salty bacon to creamy mushrooms and tangy blue cheese.
Perfect for a lazy weekend breakfast or brunch!
If you wanted to make a larger portion, simply double the ingredients and cook all together in a larger baking dish.
Ingredients
- 3 cup, cut pieces baby spinach
- 3 slice – 6" long bacon
- 2 medium egg whole
- 2 tablespoon olive oil
- 1 cup, sliced mushrooms
- ½ cup, crumbled blue cheese
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Heat 2 tablespoons of olive oil in a frying pan over a medium heat. Add the chopped mushrooms and fry gently until tender – about 3-4 minutes.
- Add the spinach to the pan with the mushrooms and season generously with salt and pepper. Cook until the leaves are just wilted. Remove from the pan with a slotted spoon, leaving any oil behind, and set aside.
- Roughly dice the bacon and add to the pan, cooking through until browned all over.
- Return the mushrooms and spinach to the pan with the bacon and stir well to combine. Remove the pan from the heat and add the blue cheese, mix well.
- Divide the cooked mixture evenly between two ramekins creating a small well in each center.
- Crack an egg into each well then transfer to the oven to bake for 10-12 minutes or until the egg is cooked through to your preference.
