Banana bread is one of the greatest comfort foods, but this version is even better because it is keto!

Ingredients

  • 1 cup almond flour
  • 2 teaspoon baking powder
  • ¼ teaspoon salt, sea salt
  • 3 tablespoon whole ground flaxseed meal by bob's red mill
  • ¾ cup the ultimate icing sugar replacement by swerve
  • 6 large raw egg
  • 1 1 tsp banana extract
  • ½ teaspoon vanilla extract
  • 1 ½ tablespoon olive oil

Instructions

  1. Preheat an oven to 350 F. Spray loaf pan with nonstick cooking spray. Combine the almond flour, baking powder, sea salt, ground flax seeds and confectioner’s sugar together in a food processor. Pulse until smooth.
  2. Add in the eggs, extracts and olive oil. Pulse until smooth.
  3. Pour into prepared loaf pan and bake for 50-55 minutes until the center of the loaf is cooked through.
  4. Allow to cool for 20 minutes before running a knife around the edges of the loaf and unmolding the loaf.
  5. Slice into 16 slices.
